Pork Tacos


Yummy Pork Tacos

Pork Roast
(I use picnic pork roast-seems to be more moist with more fat on the roast)

1 small can of hot diced jalapenos
(hot obviously gives more flavor you can do mild though. I usually buy a bottle of jalapeno and dice them myself and do about half the jar cause we like flavor)

Most of a bottle of La Victoria Green taco sauce

1 cup or so of water

Combine the above ingredients in crock pot and let it cook overnight. Once pork is tender enough-shred the pork with a fork and allow to continue to cook. I usually cook the meat for a total of 9 hours or so.

Corn Tortillas ( I warm them in oil on the stove top)
Shredded pork (from above)
Shredded Monterey Jack cheese
Black beans or refried black beans
Sour cream
pico de gallo (bought or homemade)
Cilantro
Fresh limes- squeezed over the top before eating

These are very easy to make (especially if you buy pico and already shredded cheese) Great for leftovers and also great to do on nachos too.


Burrito Casserole


Burrito Casserole

1 lb ground beef or 1 lb ground turkey
1/2 medium yellow onion, chopped
1 (1 1/4 ounce) package taco seasoning
6 large flour tortillas
1 (16 ounce) can refried beans
2 -3 cups shredded taco cheese or 2 -3 cups cheddar cheese
1 (10 3/4 ounce) can cream of mushroom soup
4 ounces sour cream
jarred hot sauce, if desired to spice it up
Directions:
Brown ground meat/turkey and onion; drain. Add taco seasoning and stir in refried beans. Mix soup and sour cream in a separate bowl. Spread 1/2 sour cream mixture in the bottom of a casserole dish. Tear up 3 tortillas and spread over sour cream mixture. Put 1/2 the meat bean mixture over that. Add a layer of cheese. You could put some hot sauce on this now. Repeat the layers. Sprinkle cheese over the top and bake, uncovered, at 350°F for 20-30 minutes.

Poppy Seen Chicken


Poppy seed Chicken

Ingredients

3 lbs chicken breasts Cooked and cubed)
1 can cream of chicken soup
1 1/2 cup sour cream
1-2 Tablespoons Poppy seeds
2 sleeves ritz crackers
1 cube melted butter

Mix cream of Chicken soup with Sour Cream, then mix with cubed chicken. Put in casserole dish. Crush Ritz and mix into melted butter. Sprinkle poppy seeds over chicken and top with crushed ritz crackers and bake for 35-40 minutes at 350. You can serve with noodles, rice or just your favorite veggie and fruit. 

Beef Taco Bake


Beef Taco Bake
1 lb Ground Beef
1 can tomato soup
1 cup pace thick and chunky salsa
½ cu milk
6 flour tortillas (8 inch) or 8 corn tortillas (6 inch) cut into 1 inch pieces
1 cup shredded cheese

In medium skillet brown meat over medium heat, drain, add soup, salsa, milk, tortillas and half the cheese. Spoon into shallow baking dish and cover
Bake at 400 for 30 minutes sprinkle with remaining cheese

Serve with Sour cream and salad

Mexican Rice



Mexican rice

Brown desired amount of white rice in pan with oil (I did 2 1/2 cups dry white rice)
When browned add the following
5 diced roma tomatoes
1/8 cup diced yellow onion
2 garlic cloves
3 cubes chicken boulion

Then add water (I think I did about 3- 3 1/2 cups for the amount of rice I did. You may need more depending. Use your judgement) Bring to boil and then let simmer for 15 minutes or so. 

Guadalupe

I got this awesome recipe from a friend in our ward. Since I don't have exact measurements I just sort of guessed. If you don't like hot you would want to tone down on the green chilies and red pepper flakes

Cut up a beef shoulder roast into about 1 inch pieces cutting off some of the fat

Add to pan
3/4 cup fresh diced hot green chilies
3/4 cup sweet onion chopped

Season with Black pepper, 1/2 salt, Red pepper flakes, garlic powder, onion powder and Lawrys season salt.  Cook on medium heat until meat is cooked all the way through and then add 1 cup diced tomatoes (these measurements for onions, peppers and tomatoes are estimate. You can use more or less but his is about what I used. It was a little more mild though. If you want it hotter add more chilies and red pepper flakes) cook with tomatoes til tomatoes are soften 

Serve with refried beans, tortillas, rice cheese and sour cream. It is good stuff!

Mom's moist Chocolate cake

This is definitely one of my favorite chocolate cakes EVER. When I was a little girl I always thought it was too rich. But as I have gotten older it is definitely a fav.

2 cups sugar
1 cup vegetable oil
2 eggs
4 T cocoa
2 cups hot water
2 tsp baking powder
3 cups flour
2 tsp soda
1/2 tsp salt
2 T vanilla

Add all dry ingredients except soda and baking powder. Mix in eggs, add hot water and vanilla. Add soda and baking powder and then add oil last. It makes a fairly runny batter. Bake at 350 for 35-40 minutes. (I always use the pam/flour spray stuff not just oil in the pan)
Cool, Frost and enjoy!!

I store mine in the fridge after the initial night. We like it cold.
